Grilled Salmon Sandwich, Fish Tale Brewpub, Olympia WA

Returning home from a Memorial day baseball game in Seattle, my friend Roger and I stopped for dinner at Fish Tale Brew Pub in Olympia. Sitting down at the last available table I was ready to order. I asked the waiter what was good and he suggested the day's special: Grilled Salmon on Ciabbata.

The salmon arrived on a ciabbata bun topped with pesto, avocado, and onions. Spraying the salmon with lemon, I dug in. The salmon came across with a delightful salt seared crust on the outside and moist tender meat on the inside. The avocado and pesto played a pleasant role of complementing the delicate salmon meat and slightly softening the toasted ciabbata. Along with a healthy portion of organic pubmade fries, the grilled salmon was a unique Northwest brewpub treat.


For my brew, I chose the waiter-recommended Dark IPA. The Dark or Black IPA is a growing style in the Pacific Northwest. Sipping Fish Tale's Dark IPA, the beer had all the hop tastes of a traditional IPA, but also had sweetness and aromas of the dark malts. And like a true IPA, Fish Tale's had the lighter body of an IPA, and was not heavy like a porter or stout.
