White Pizza, Papago Brewing, Scottsdale, AZ

The menu at Papago Brewing offers an interesting selection of items such as salads and sandwiches. However, what caught my eye was the pizza selection under the heading of "Papago Pies". It's been many a year when pizza was referred to as "pies".

I ordered the personal White Pizza. The pizza arrived with a wonderful thin crust. Topped with fresh spinach, sun dried tomatoes, artichokes, mozzarella and feta cheese on the brushed garlic oil crust, the pie was crunchy on the first bite. The mozzarella and feta added a nice chewy-creamy texture to complement the spinach and tomatoes. With the tanginess of the spinach and the salty feta, the spicy pizza was a brewpub treat. And to show you how deliciously crunchy this pizza was, check out the burnt cheese on the photo below.

For my brew, I chose the Hopago IPA. As the name warns, this IPA is truly hoppy. The initial taste is the bitter of the hops followed by the slight sweetness of the malts. I found that the Hopago went well with the spicy flavors of the pizza. If you like IPAs and hops, try the Hopago.
