Spinach Enchilada, Prescott Brewing Co., Prescott, AZ

In the heart of historic downtown Prescott one finds some good beer and equally fine food. I'm in Prescott's brewpub looking at a mouthwatering menu. I choose the Spinach Enchiladas. This dish comes with white corn tortillas chock full with spinach, onions, and jack cheese, topped with red chile sauce and melted cheddar cheese. As per plato de Mejicano requirement, the enchiladas are served with refrito black beans, southwest rice, house salsa and sour cream. You can add chicken for a small extra, but I chose to go vegetarian this time.
Spinach Enchilada
What you get is a worthy plate of Southwest goodness. The chewy corn tortillas and vibrant spinach are smothered with gooey melted jack cheese that play wonderfully with each other. Spinach and cheese can't combine much better than in an enchilada. And the rice! There are wahoo bits of picante hot pepper in the rice that ask for a serious quaff of a Prescott ale to put the fire out. Sour cream helps, too. The delicious refrito  beans are authentic and mellow and deserve an applause. In all, the PBC's Spinach Enchilada is a filling and pleasant meal.
For my brew, I  chose the mild Willow Wheat. Throwing a spritz of orange slice slightly sweetened the wheat, but didn't  detract from the refreshing qualities of the beer. With light body and hops, PBC's unfiltered wheat drank down smoothly, with a pleasant crisp aftertaste. You can have two of these if you like.

Prescott Brewing is popular with the locals-always a good sign. As  I was leaving, more patrons were just arriving.
